San Marzano - Gustarosso - 2500 g
Something we're really proud of is being able to offer San Marzano tomatoes from the star producer Gustarosso that we personally select. For each harvest, we test the best fields and the best picking dates, and that's where our tomatoes come from. In other words, we work our butts off to give you the best possible tomatoes :)
The tomatoes we chose this year come from a field right in the middle of Sarno, and they were harvested on July 27th. The relatively early date is due to the warm weather around Naples, which favors an earlier harvest. On the back of the can, you can see the batch number and our logo, and then you know that the tomatoes have been selected by us personally.
About the tomatoes themselves: What we look for are tomatoes that are fully ripe but still retain acidity - that's it. That's exactly what you get with these San Marzano tomatoes from the farmer cooperative Gustarosso. The tomatoes are sweet and flavorful, while still having a certain tartness.

Here you have simply the optimal plastic container for storing dough balls. No more, no less. It may not seem so difficult to find a good plastic container, but we actually had to try quite a few.
These also work well for various toppings, as the lid seals tightly. Plus, they're very easy to stack, so they take very little space in the fridge. We dare to say that you can't have too many :) We ourselves have over 2000...
Another great thing is that the containers are transparent, so you can clearly see how the dough is developing and what toppings are inside.

Fior di Latte - Latteria Sorrentina - 780 g
We had to insist a lot, but now Latteria Sorrentina has finally agreed to sell their Fior di Latte in small packages to us. This cow's mozzarella is really intended for pizzerias in Naples and is made in the same way as in the traditional town of Agerola, where they are known for their extremely tasteful Fior di Latte.
This has long been a little missing link when we compared ourselves with pizzerias in Naples, because most Swedish cheeses of the same kind are simply not very good. But now that we use it on our own pizzas we are happy :)
Compared to what you find in your local grocery store, this Fior di Latte has a distinct and refreshing taste, while being a bit drier and having the right consistency for Neapolitan pizza. That's why we're very grateful to be able to use it and offer it here on the webshop.
Please note: Fior di Latte is delivered frozen, and when it arrives you should pour out the water and put it in the fridge - where it will last for about 1-2 weeks. In the summer, however, it is not always frozen. You might be able to freeze the cheese again, but we don't recommend it. The stickiness changes depending on how long it's in the fridge and the batch it comes from, so you'll have to adjust the size of the pieces.

Drug Scale 0.01- 100g
Regular household scales are unfortunately quite useless for weighing small amounts under 10 grams, so a scale like this is somewhat of a necessity. This applies especially to us pizza bakers, who often weigh things like yeast, malt, salt, lactic culture - you name it.
We use it ourselves at the pizzeria for everything weighing under 50 grams, and in our opinion it is an indispensable tool that one should not be without. Otherwise, this scale measures very accurately and it is simply nice to use.

Our book is about exactly what the title says: Pizza Napoletana - The quest for a perfect Neapolitan pizza in a home oven, custom grill, and wood oven.
To get this book out, we worked non-stop for over a year and a half, and the restaurant remained closed until it was complete. It was supposed to take three months, but things usually take longer than you think; especially when you're trying to do something really good.
We often use the book still today, both to remind us of the hell it was writing it, and to use the information which holds up remarkably well.

Rain gauge for measuring fermentation
We often talk about “rising to double size”. But how do you know when that happens? Yes, it's damn difficult to say unless you have a good measure like this one. In our book, we describe how using such a rain gauge, you put a piece of dough in the tube and simply watch it grow. Since there are clear boundaries, you know exactly when the dough has doubled in size.
This is undoubtedly one of our must-have tools, which we have used since day one and will never abandon. Something exciting about these rain gauges is that they are manufactured by Nyby in none other than the plastic paradise Småland, instead of China. This was, of course, something we needed to promote.

Olive Oil "Fruttato Leggero" - Fam - 500 ml
We've been buying oil from Fam for a few years now, and for the past two years, we've been using their Fruttato Leggero on our pizzas before they go in the oven. If your Italian is rusty, Fruttato Leggero means it's mild. We use a milder oil like this on the pizza before baking because it then becomes a great complement without taking over.
However, it must be said that there's still quite a lot of punch in this olive oil - after all, it's Italian and not a made-up thing. So, you still get the taste and it's much more exciting than regular olive oil from the shop around the corner.
Of course, the oil can vary a little from year to year, but this one consistently maintains a very high standard. Enough talk - this oil is simply delicious, elegant and perfectly balanced. According to us, that is :)

We've been buying oil from Fam for a few years now, and for the past two years, we've been using their Fruttato Leggero on our pizzas before they go in the oven. If your Italian is rusty, Fruttato Leggero means it's mild. We use a milder oil like this on the pizza before baking because it then becomes a great complement without taking over.
However, it must be said that there's still quite a lot of punch in this olive oil - after all, it's Italian and not a made-up thing. So, you still get the taste and it's much more exciting than regular olive oil from the shop around the corner.
Of course, the oil can vary a little from year to year, but this one consistently maintains a very high standard. Enough talk - this oil is simply delicious, elegant and perfectly balanced. According to us, that is :)

Pecorino Romano - 200g
Lacesas Pecorino Romano DOP is the pecorino we use at the restaurant, for both pizza and pasta dishes like Cacio e Pepe. This is a pecorino from one of Sardinia's top producers, and it has a "DOP" designation, which means it is traditionally produced and always in the right place. No cheating here!
We think this pecorino is perfectly balanced and simply very delicious, which is enough for us. Some other similar cheeses may stand out too much in one direction, but this one is always pleasant. For us, that is :)
Does it cost a bit more than the cheese from the store? Absolutely, and rightfully so. The difference compared to what we would call rubbish-peccorino is incredibly large, and it is also noticeable on the pizza.
A little tip from the coach is to stay as far away as possible from ready-grated pecorino, because it is really chaos...

Spicy honey - 180 g
We don't know why, but honey with chili in it is really good on pizza. If you think about it, it's not so strange - both are insanely delicious on their own, so why not mix them? Sweetness, saltiness and whatever you call it.

Spicy Salami - 480g
Here it is! The salami that we have on the number 4 pizza at the restaurant. This is a salsiccia piccante with chili that adds a lot of extra flavor to the pizza. It is similar to pepperoni, but the taste is slightly different. The explanation might be that pepperoni is the American version while this is the traditional Italian one.
How hot it is can be hard to say since we are all so different. Just perfectly spicy for a pizza if you ask us :) A little kick is always nice while avoiding red and sweaty faces.
We couldn't sell it before as it's made by a small company, and we couldn't buy more than just for us. Also, there was resistance to packing it one by one, but now it's finally here.
Good to know is that the salami is quite expensive for us to buy. Why? Well, because it's the best. So if you think the price per kilogram is a bit more expensive than expected from us, you should know that we have the absolute lowest margin on all our products here. Sometimes if you want the best, it costs. Unfortunately, can't often avoid that... Good talk.
The sausages are about 400 grams each, but it can be plus/minus a few grams.

Chili flakes - 250 g
We believe that the chili from Tuttocalabria is the tastiest, so it's quite natural that the dried version is also great.
Tuttocalabria is an all-around quality brand, and this chili comes from the famous area of Spilinga, where a lot of other delicious things are produced.
Of course, the chili flakes are a bit strong, which we think they should be. It's difficult to compare and describe exactly. With the amount, you'll have to test and proceed with caution if you're sensitive :)
Nothing to fuss about really, the size is 250 grams and if you're looking for tasty chili flakes, you have them here. We haven't tasted anything better.

Here you get fine cherry tomatoes from the farmer's cooperative Gustarosso. The tomatoes still have their skin and have nice ripeness, beautiful color and simply really good taste. It doesn't have to be more complicated than that, right?

This biscotti stone is made by the prestigious Fornace Saputo, who are the best in the world at making refractory stones for pizza baking in ovens over 400 degrees. Everyone who knows something about anything knows this is true :) These stones are for those with pizza ovens that reach over 400°.
Why such a good stone is so important is because the thermal conductivity of the material the pizza is lying on must be very precise. If you have an ordinary refractory stone that you find around Sweden, the pizza's bottom burns in no time.
These stones are actually one of the biggest secrets of Neapolitan pizza ovens, and you should know that keeping it a secret is a big deal. If you're going to bake good Neapolitan pizza at high temperatures, you just can't avoid using one of these.
If you want to adjust the dimensions of the stone to fit your oven perfectly, just put a diamond blade on the angle grinder and go for it. The stone can then be cut like butter.

Pizza Peel for Ooni
We've designed this pizza peel specifically to fit Ooni ovens measuring 12 inches; that is, ovens with approximately a 30 cm wide opening. We chose to make these because those we've seen on the market were either too expensive or simply not good enough.
Wooden pizza peels may need some breaking in to reach their full potential, but once they do, nothing beats them. There's probably nothing more to say other than this one feels nice in the hand and does the job well. And the fact that it doesn't cost a lot doesn't hurt.
It comes with a bit of sandpaper for polishing the peel until it becomes really slick on its own. This is a must for maximum slide and the easiest pizza baking. Of course, it's also Made in Falkenberg.

Guanciale is air-dried pork cheek, and when it comes from a quality producer like Pedrazzoli, you don't even need to cook it. It's delicious as is, on a sandwich or whatever else.
On pizza, it can be thinly sliced and added before or after baking. We usually go for thin slices or shredded pieces. If the guanciale is going in the oven, it should be a bit thicker so you can get a nice, crispy surface without it drying out and becoming bland. When it comes to pizza with guanciale, we like to keep things simple. Think Fior di Latte, Pecorino, basil, olive oil, garlic, and finally the guanciale. This is incredibly delicious.
For the carbonara, you'll want to fry it relatively slowly. A tip is to drain off the fat periodically, which can then be used for the sauce. Once the guanciale is crisp, let it "dry" on a bit of paper. Be warned, the end result is likely as addictive as drugs, so be careful. And no, not all guanciale tastes the same, regardless of the product. The difference is huge.

Lucariello (Yellow small tomatoes) - 550 g
Gustarosso's Lucariello tomatoes are completely unique to the Agro-Sarnese-Nocerino area, which is the same area where the San Marzano tomatoes are grown. By the way, have you noticed that we like Gustarosso? :)
These yellow tomatoes are a hybrid between Piennolo and the other tomatoes from the Nocerino area. They have quite a thick skin and relatively firm flesh, which together with the pleasant, deep flavor makes them perfect for dishes where the tomatoes should be in focus.
For the pizza, just slice the tomatoes and put them on with a bit of buffalo mozzarella and olive oil; after baking, of course. That's it - nothing more complicated than that.

Oven cloth for baking in an electric oven (home oven)
This is a must-have for pizza baking in your home oven. To be able to slide the pizza in while still keeping its round shape, you need an oven cloth like this one, plain and simple.
It's easy to use. Start by laying the rolled-out pizza dough on the oven cloth. Then, spread out tomato sauce and any other toppings you want. After that, slide the pizza peel under both the pizza and the cloth. Finally, slide the pizza along with the oven cloth onto the pizza stone, and you're done!
If you check out our not so great Youtube video below, you can see how we use this to get a perfectly round pizza every time in a regular oven, even when baking right next to the grill rack.
This particular cloth can be used about 100 times, as it's quite durable. Its maximum temperature limit is 320 degrees, and it measures 45 x 40 cm.

Infrared thermometer
An IR thermometer might not be super exciting, but god, it makes the job so much easier with a good one. The most crucial feature of a good IR thermometer like this one is that the laser is clearly visible even in bright light, which this one does.
When you're baking pizza, you need to know when the floor is fit for fight so to speak, and for that, you need an IR thermometer. You also need a thermometer that can handle high temperatures of at least 550 degrees. This one measures from -30 up to 850 degrees, and it's very precise, so nothing to worry about here!
Something that's great about it being able to handle such high temperatures is that you can measure everywhere in the oven, including the ceiling and other parts. Why we want to know the temperatures everywhere is a good question, but the answer might be that we just hate question marks...

In Italy, everyone knows that the best chili is made in Calabria. If you dig a little deeper, everyone in Calabria knows that the best chili comes from the tiny place called Spilinga. This chili from quality producer Tuttocalabria is made right there, so we've hit the jackpot.
What's most unique about this chili is that it has a distinct tangy flavor in addition to being spicy. Otherwise, it just tastes good. After all, it's not hard to find a spicy chili, but it would be nice if it also tastes good :)
Exactly how spicy it is can always be hard to describe as we're all so very different. However, this chili is relatively spicy from a Swedish perspective at least, so if you're sensitive to heat, you may want to take it easy.

Hammer Spackle
We've tried many spatulas in search of the perfect one for pizza baking, and this 10cm one from Anza is the best we've found. It has great stiffness while maintaining the right flex at the bottom, allowing you to get under the pizza dough in the dough box.
A spatula like this is necessary for lifting doughs that are in boxes, and it's great at quickly clearing your baking area. Plus, it's really good for chopping garlic à la minute, which is standard in Naples. You simply take a clove and chop it thinly directly on the pizza bench with the spatula. This way, the garlic gets a bit mashed and the flavor spreads better on the pizza.

These capers come salted, so before you eat them, they should be soaked in water for about 60 minutes. The producer says they need to soak for several hours, but we don't bother with that. Exactly how long depends on how salty you want it, so you'll have to experiment :)

A good thermometer like this is something everyone should have. This is the one we use ourselves, and we think it's really good.
This thermometer has a very fast reading, which is important when checking the water temperature. We often talk about flow, and there's no doubt it's annoying when you have to stand forever waiting for the thermometer to react.

Truffle Oil "Tartufo Nero" - Fam - 250 ml
Truffle oil is a bit of a controversial thing. First and foremost, we have to acknowledge that truffle oil can never contain real truffle, as truffle is not oil-soluble. Now you know! When we started the pizzeria, at least we didn't know much about this...
We don't really know what to say, except that out of all the truffle oils we've tried, we like this one the most. Like everything else, we've experimented to get this right.
On our mushroom pizza, we mix in our regular olive oil with 20% of this, which doesn't give a super strong flavor, but a nice touch. This is something we could never change because our regular customers would go crazy. Our mushroom pizza is by far our most popular pizza, even though it contains something as controversial as truffle oil.
We don't care about the controversy and just keep going. Then, if you're curious, we also firmly believe that many dishes that claim to have real truffle only use flavor enhancers like this one. This is our little observation anyway.

Parmigiano Reggiano 22 months - 500g
This Parmigiano Reggiano is from Rosola, which is a small producer with only 8 employees. This one is made from "regular" cow's milk, which makes it cheaper than its counterpart produced from Bianca Modenese cows.
The Parmesan is aged for 22 months and has a nice softness, good saltiness and moderate nuttiness. Simply an incredibly good Parmesan that goes well with many dishes.
Good to know is that the weight of the cheese may vary plus/minus a few grams.

Parmigiano Reggiano "Vacca Bianca" 30 months - 500g
Rosola is a very small producer with only 8 employees who make this extremely tasty Parmigiano Reggiano. The parmesan is made from the milk of a cow breed called Bianca Modenese. This breed is endangered, and Rosola has had to fight hard to save it.
These cows only yield about 20 liters of milk a day, but it is sweeter and richer in protein than regular milk. This, along with a whole 30-month of maturing and the fact that Rosola only produces one wheel of cheese from this kind of milk per day, creates a parmesan that is nothing less than the best of the best.
Is the parmesan from the store around the corner cheaper? Yes, of course, but the price here is damn well justified. Plus, the actual price difference isn't as big as one might think…

Flour Scoop
This flour scoop is designed to suit smaller flour bags of about 1-2 kg. It's great because most people at home work with that size. Of course, it also works with larger bags, but you probably figured that out already.
If you haven't already noticed, we test quite a few kitchen tools, including flour scoops. We think this is the perfect balance between size and function. Having a good flour scoop is indeed more important than you might think, as it gives you a much better flow when making pizza. One scoop holds about 500 grams of flour.
NOTE: The scoop should not be washed. If you get it messy, simply wipe it off or break off any hardened parts. Aluminium tends to oxidize quite seriously when washed.

Tomato Bowl 1.5L
It may not look like it, but you should know that we fought hard to bring you this bowl, which had to be nothing less than perfect for making tomato sauce. One of the most important things was that it narrows a lot towards the bottom, making it easy to scoop up the sauce even when there's little left. It should also fit our favourite ladle well.
We must say that we feel we've succeeded well in our task, and now we have an awesome tomato bowl. It works well for both large and small batches and we're simply damn pleased with it. Plus, it's also pretty good-looking! If you ask us :)

Burrata from Latteria Sorrentina - 125g
Just like with buffalo mozzarella, you have to find a good compromise for your Burrata. You can't get it freshly made and recent as in the best places in Puglia. For some strange reason, Latteria Sorrentinas's Burrata has always won whenever we've had blind tastings for Burrata made for longer shelf life. It's oddly produced in Naples, but it doesn't matter as long as it tastes good :)
We actually made a trip solely to find Burrata without finding a single one that was good enough to be sold with more than 2 days of shelf life. Kind of funny, anyway.

Oven Dog
We recently launched our oven tool, which is a clever gadget to improve pizzas when cooking with a wood-fired oven. By lifting the logs, air can get underneath them. This results in better burning with a higher and more even temperature. And as you may know, higher temperatures make it easier to achieve really nice, high edges.
Unlike many other oven tools, ours is smaller in size, making it more suitable for most hobby ovens that you likely have at home. It is made of cast iron, so there are no welds that can break in the high heat. This really is a no-brainer for anyone with a wood-fired oven who wants to perfect their pizza. In the clip below you can see exactly how to use it.
You can cut it a few centimeters at the end if you want it to fit an oven of about 60 cm. Without cutting, it fits wood-fired ovens with a width/diameter of about 60-100 cm.

When we were looking for the perfect buffalo mozzarella to use and sell, it was tricky to get a good balance between quality and sustainability. Unfortunately, you can't get the best of the best here in Sweden, but here you have the best compromise we've found so far.
So how good is this cheese then? Just compare it with the one you find in your regular grocery store, and we guarantee the difference is significant. It tastes considerably more and better, while the consistency is superior. No more, no less.

Chopped spicy chili peppers (Hackad chili) - 285g
In Italy, everyone knows that the best chili is made in Calabria. If you go a step further, everyone in Calabria knows that the best chili comes from the small place called Spilinga. This chili, from the quality producer Tuttocalabria, is made there, so we've definitely found the right place.
What's most unique about this chili is that it has a distinct sour taste in addition to being strong. Otherwise, it just tastes good. After all, it's not difficult to find a strong chili, but it should also taste good :)
Exact strength is always hard to describe because we are all so different. However, this chili is relatively strong from a Swedish perspective at least, so if you are sensitive to heat, you might need to take it easy.
This chili is chopped, so it comes in ready-made smaller pieces. We also sell whole ones if that suits you better.

Vermiculite plate (to cool the oven floor)
Having trouble with your first pizzas getting burnt on the bottom? Then you should try one of these vermiculite plates. Working with this is like day and night, and in the video below you can see exactly how to use it. The size is 33x33 cm.
To put it simply, you put this plate in the oven where you plan to bake the pizza. Let it sit there for a few minutes, and the floor "cools" down. Then just take it out and carry on as usual.
We use this plate ourselves every day, because the first pizzas would otherwise get a burnt, bitter bottom. It doesn't matter if we have the perfect floor for baking pizza in under 1 minute, they would have burnt anyways... So get this if you want to avoid that!

Salame Cacciatioren from Pedrazzoli is simply a really tasty salami that tastes as it should. Pedrazzoli is a well-known Italian producer with only organic pigs that are well treated, which of course we like to support.
The salami is relatively mild and sweet but still has the typical salami flavor everyone knows about. There's nothing to complain about the consistency either...

This is one of the most classic pasta types from Gragnano, and we think Il Mulinos is the best - just like with all the others :)
With its tube-like shape, you can eat this pasta with almost anything, and it also works well in pie-like recipes.
A fun fact is that this type of pasta got a real boost when "The Sopranos" became standard evening TV viewing. Those who know, know. "So what, no fuckin' Ziti now?" - AJ. If the pasta is good enough for a mafioso, it works for us too, right?

Mortadella - 100g
Pedrazzoli is certainly a time-honored meat producer from northern Italy. Their pigs eat only organic food and always get to run around freely - in other words, they have a very good life. Bravissimo. Maybe that's why they manage to create such good mortadella like this one?
This mortadella delivers a mild and pleasant taste that still has a nice character. Its consistency is almost as creamy as butter, which is exactly how it should be when it comes to mortadella. No complaints.

Aluminum shovel 30cm wide - 55cm lång
We decided to develop our own aluminum pizza peel because we always thought the others were too pricey. I mean, it's just a piece of metal, right? We use these peels ourselves at the restaurant, and from our experience, they're just as effective as others on the market, but much more reasonably priced :)
Is there some magic that makes our aluminum peels glide better than all the others? No, there isn't. And nobody else has it either! The difference between our peels and many of our competitors' - apart from the price - is that our aluminum is hard anodized, resulting in increased durability. That's why the peels are a bit grayish instead of silver-colored.
Each peel comes with an extra end piece, so if you need to shorten it, all you have to do is get out a hacksaw and start sawing. Then you glue the extra piece on with a little bit of glue and in five minutes the job is done. It's not harder than that. That's why it's smarter to buy a peel that is too long rather than too short.
The measurements for length include both the handle and the peel, and there are three different lengths to choose from.

A traditional olive oil can used by most of Naples. It's not just popular because it's good-looking and stylish, it also makes the job easier and improves one's flow. And as you might know, flow is key in pizza baking. It holds about 0.5 liters.

Pizza Knife
Believe it or not, when we started Lilla Napoli, one of the most important details was getting the pizza knife right. We simply had to have something that was nothing short of perfect, because we had become extremely tired of all the bad knives out there.
The thing is, you hold a knife in a special way when cutting pizza, so your pizza knife must be adapted for that. You want it to fit comfortably in your hand. Then the angle of the cutting surface must be such that you don't scrape your knuckles on the pizza when cutting with the blade horizontally against the plate. Incredibly important of course :)
The knife is also really good and we have to say that we think it's almost a bit too handsome…

Mascarpone - 500g
Mascarpone is a creamy Italian fresh cheese often found in various pastries like tiramisu and cheesecakes. We use it ourselves along with Nutella on our dessert pizza at the restaurant, and if you've tried it, you know how good it is :)
This particular one comes from Latteria Sorrentina, from whom we also buy our Fior di Latte. They are really skilled and this mascarpone is among the best we've tried (that's frozen). It's mild, creamy, and simply tastes right. No complaints.
NOTE: The mascarpone is delivered frozen, and when you get it, you should put it in the fridge - it lasts about 10 days there. However, it's not always frozen in the summer. It might be possible to freeze it again, but we can't recommend that.

Cucunci (Caper berries)
Cucunci - or caper berries in English - is something that has flown a bit under the radar. Even though it's rarely used in cooking, it really shines as a garnish on a salad, charcuterie board, or something similar.
The regular caper berries from the store are often in a vinegar solution, which makes them taste like pickles. If you haven't noticed it before, you will now that we've pointed it out :) Sorry...
These, on the other hand, have a good and distinct flavor that actually tastes like capers. Plus, they have that satisfying crunch that caper berries should have. So if you're going to have caper berries, these are the ones to go for. By the way, they're grown on the caper paradise of Salina, and they're made by the quality producer Sapori Eoliani. It's perfection, we might say.
The caper berries come salted, and you must let them soak in water for a while before eating. The producer says a few hours with several water changes, but we usually manage just over an hour. However, you'll need to adjust for how salty you want them.

Floor stand
Getting the pizza onto the peel can be tricky without a good resting place for the peel. After all, a pizza peel is quite long and when sliding the pizza from a table or bench, you want a slight upward tilt to make it easier to get the pizza on. Our floor stand solves this problem exactly.
With such a stand, you can freely choose a surface to slide the pizza onto. You simply place the large flat part of the peel where you want it, and then take the end of the handle on the stand which you can adjust the height of to get the right tilt. At the bottom, there is a neat granite plate, which keeps the balance well.
In the restaurant, we have a fixture on the wall that serves the same function as this floor stand, but it only works if you have the perfect dimensions where you work and if you can manage to mount one.
We often talk about must-haves, but this is really one of those things if you don't have a good alternative.

Round biscotti floor 80 cm - 80 cm x 4,5 cm
Fornace Saputo is known to be the best in the world at making refractory stones for really hot pizza ovens, and they are the makers of these biscotto stones.
A biscotto stone needs to be of high quality because the thermal conductivity must be just right. With a regular, poor quality stone, your pizza crust will burn. A fun fact is there are lots of secrets around such stones in Naples - probably because they don't want everyone to have access to them :)
This is a set of four biscotto stones that together form a circle 80 cm in diameter. Compared to the other biscotto stones we sell, these have a slightly more serious thickness of 4.5 cm instead of 3.2 cm. This means they take a bit longer to heat up, but you get a more even temperature. This is great if you want better results when making multiple pizzas.
If you have a round oven, these are a must-have because you won't need to round them off.
NOTE: When you receive the stones, you should check as soon as possible that they are intact, as they can break during shipping. If any stone is broken, just take a picture of it in the box and email it to shop@lillanapoli.se.

Filetto di Pomodoro är helt enkelt filéade tomater. Dessa är från producenten Terramagna, och de är San Marzano-tomater, fast man får inte säga det eftersom de inte är hela och skalade (regler och sånt ni vet).
Tomaterna ser nästan ut som någon skurit upp köttbitar, men inga vegetarianer behöver oroa sig :)
Filéade tomater behåller mer struktur och blir lite mer fasta än hela skalade tomater, vilket gör att de blir mer påtagliga i rätten samtidigt som texturen också blir härlig. Snyggt och lite speciellt är det också.

Here you have a mobile, genuine Neapolitan pizza oven, and we can't say anything other than it's the best one you can get when it comes to Neapolitan pizza ovens that cook one pizza at a time.
This oven is of course suitable for home use. So if you want to bake extremely good pizza at home, just go ahead with this one. It also actually works for restaurants, as long as you don't bake more than 40 pizzas per hour.

Extremt goda är de också - vet dock inte vad mer man kan säga än att de är söta och goda. Perfekt tomatsmak helt enkelt :) Storleksmässigt är de lika våra datterini.
Tigertomater passar till mycket, men de används oftast till sallader eller såser av olika slag.
De kommer i vatten och salt, precis som våra gula lucariello-tomater.

Dessa tomaterna från Terramagna skulle vi förklara som söta och extremt goda fanta-färgade pingisbollar (de är alltså stora som pingisbollar).
Om man gillar tomater (och vem gör inte det??) lär man gilla dessa också. Väldigt stor skillnad på kvalitetstomater som dessa och halvkassa från standard butikshyllan. Behöver nog inte tjatas något mer.

If you want the very best and nothing less, you've found the right pizza oven here. This is a traditionally built Neapolitan pizza oven where no detail has been compromised, unlike many site-built ovens. The sizes are 105/120/130 cm.
This oven is used by many of Naples' most famous pizza makers, including Ciro Salvo (50 kalo). We can't express how happy we are that our friend Marco Parente let us sell these legendary ovens that produce nothing less than fantastic results. The oven is delivered on a stand with wheels.
We have exactly one of these ovens ourselves, so feel free to drop by if you're wondering how it works and performs. Of course, you can ask as many questions as you want, and you're welcome to try baking in it yourself to get a feel for it. If you want to know more in person, just let us know and we'll set aside some time :)
The only thing we have to complain about is the weight, which is certainly over 1 ton more than other mobile ovens from Naples. And yes, we really mean “1 ton more”. It's just really heavy. But rest assured, it is solid! And the results speak for themselves…

If you want to try the flour that we use ourselves at the pizzeria (because if we use it, it must be really damn good, right?) then this package is for you. Here you get a total of 4 kg of flour of two different types:
2 kg Vigevano Tramonti Oro - This is simply a real quality flour. Despite its high cost, we have used it a lot, often in 50/50 mixes with other flours, and the results have been very good. So it is definitely worth trying! (W 330-360)
2 kg Caputo Pizzeria - Here you get Naples' most used flour when it comes to pizzerias. It is something that is guaranteed to work for Neapolitan pizza. The flour is a bit on the weaker side, which makes it suitable for regular doughs. (W 260-270)

Petra Try Out Package
If you're keen to try fine flour, Petra is probably what you're looking for. Petra is known as the more "upscale" flour producer, and you can find their products at many of Naples' top places. Their flours are a bit more expensive than most, but at the same time, you get a stone-ground and tasty flour that is guaranteed to deliver.
In this package, you get 6 kg of flour, with 2 kg of each type:
Petra 5037 - 5037 flour is according to Petra their top product. It is of the stronger variety which makes it well suited to indirect doughs like biga. (W 320-340)
Petra 5063 - 5063 flour is also one of Petra's best products. The difference compared to 5037 is that it is a bit weaker and therefore often more suitable for direct (standard) doughs. (W 260-280)
Petra 0102 HP - 0102 High Performance is one of Petra's most exciting flours designed to give pizzas high edges with maximum swoosh. Due to its strength, it is well suited to indirect doughs. (W 320-340)
