The Vigevano Tramonti Oro flour is definitely a finer flour with a consequently higher price tag. However, we want you to know that we have the same mark-up on all our flours, so if the price seems almost absurdly high, it's the manufacturer's fault. So, you're not going to see any luxury cars in our driveway just because we're selling a lot of this :) 

We often use this flour for 50/50 or 30/70 mixtures with other, simpler flours. The results have been very good and flavorful, so even if it costs an extra penny, we think it's worth at least trying. Unfortunately, it's often the case that what tastes really good costs a bit… 

The W-number of 330-360 suggests that the flour is intended for indirect doughs like biga, which it is, but we've made nice regular doughs with it. Of all the "biga flours", this one leads to the least "tough" dough when making regular dough. It's good to know that this flour soaks up less water than the standard Caputo Pizzeria: about 1-2% less.

Wow! Vilket pang-mjöl

Kört ett par biga-degar med det här mjölet och kan bara säga : wow! , fluffar upp sig i kanterna som sockervadd . Luftiga och fina pizzor . Lite svårt att hantera vid högre hydrering, läs : över 70%
67-68 👍👍👍rekommenderas alla dagar i veckan .

Köpte ert ”värsting” mjöl och standardmjölet.Blandade 50-50 och blev mycket nöjd med resultatet.Degen kalljäste som vanligt i 20 timmar med lite surdeg och minimalt med Gäst
