We cannot express enough how happy we are that this was done for us. This has long been a bit of a missing link when you compare yourself to pizzerias in Naples. The difference between this and the one you can buy in your regular store is that it actually has quite a distinct flavour that comes from a traditional lactic acid fermentation made on its own cultures, much like a sourdough solid for cheese. In addition, the cheese is a little drier and with the right consistency for Pizza Napoletana. The fior di latte is frozen and when it arrives you pour out the water and put it in the fridge. This very traditional Fior di Latte varies a little depending on the batch. Sometimes it is drier and sometimes stickier so you have to be prepared to cut into different sizes to get about the same melt. The end result is the important thing. Fior di latte will usually not be frozen when it arrives. Not in the summer anyway. If you want to refreeze it, it will change quite a lot. Many people do it this way, but it is not something we can recommend. In that case, do it at your own risk. The cheese lasts about 1-2 weeks in the fridge after it has thawed. Therefore, we have developed our own which is not expensive. Not harder than that. We use peels that we have designed ourselves as they are as good as anything else but cheaper. As for the slide, there are no miracle cures among the aluminium paddles on the market. The only difference to ours and many others is that ours are hard anodized and last better. Therefore, the spade itself is grayish and not silvery. This coating simply lasts better than regular anodizing. The glide is not significantly different. You would like to write that ours have a special coating that increases the slip by 15%, but that would just be bullshit :) Most of the well-known brands that exist perform equivalently according to our experience.
