VeraPizza-certified flour package
VeraPizza-certified flour package
Here are three of our favorite flours that are also VeraPizza-certified. Associazione Verace Pizza Napoletana (AVPN) is an organization aiming to preserve the authentic, traditional Neapolitan pizza.
That these flours are certified by AVPN means they meet their requirements for a traditional flour suitable for Neapolitan pizza. So, in this package, you get quality through and through, with no funny business.
In the package you get the following:
-
Caputo Pizzeria: This is the so-called standard flour that is the most used among Naples pizzerias. So, you can trust it to get the job done. With a W-value of 260-270, it's relatively weak, which means it's great for regular (direct) doughs.
-
Molino Piantoni Tradizionale "00 MD": "00 MD" from Piantoni is like Caputo Pizzeria in many ways, but we've noticed that it gives a slightly more even color on the pizza base. The W-value is 290-320, so it works for most things :)
-
Petra 5063: Petra is a bit of a fine-producer with customers often being from Naples upscale pizzerias. There's nothing to complain about with this flour, and with Petra, it's always good stuff. It's one of our weaker Petra flours with a W-value of 260-280, so it's great for regular doughs.
