Molino Piantoni's "00 MD" (MD stands for medium-long fermentation times) has probably risen a bit as a favourite with us lately. In many ways, the flour shares characteristics with Caputo Pizzeria, but we think it might give the dough a slightly more even colour, which we personally like. However, the flour absorbs less than Caputo pizzeria, which must be compensated for.
