We've tried many spatulas in search of the perfect one for pizza baking, and this 10cm one from Anza is the best we've found. It has great stiffness while maintaining the right flex at the bottom, allowing you to get under the pizza dough in the dough box.
A spatula like this is necessary for lifting doughs that are in boxes, and it's great at quickly clearing your baking area. Plus, it's really good for chopping garlic à la minute, which is standard in Naples. You simply take a clove and chop it thinly directly on the pizza bench with the spatula. This way, the garlic gets a bit mashed and the flavor spreads better on the pizza.
