Burrata from Latteria Sorrentina

Just like with buffalo mozzarella, you have to find a good compromise for your Burrata. You can't get it freshly made and fresh like in the best places in Puglia. For some strange reason, Latteria Sorrentina's Burrata has always won when we had blind tests of burrata made for a slightly longer shelf life. It's oddly enough made in Naples, but shit all the same as long as it's good :)

We have actually made a trip just to find burrata without finding a single one that was ripe enough to be sold with longer than a 2 day shelf life. A bit of fun though.
