Really tasty capers from Sapori Eoliani. This is the best capers we've tasted, with a distinctive, intense, and overall good taste. Of course, we've tried a lot when it comes to capers. They also come from the island of Salina which is often said to produce the best capers.
If you're not that familiar with capers, you might not know the crucial differences. Capers from the regular store are in a vinegar solution, which makes them taste like pickled cucumbers. It might sound strange but once you notice it, it's hard to ignore.
These capers, on the other hand, taste like capers should, so if you've never tried real capers before you might be surprised. By the way, all serious capers lovers and producers know this to be true.
These capers come salted, so before you eat them, they should be soaked in water for about 60 minutes. The producer says they need to soak for several hours, but we don't bother with that. Exactly how long depends on how salty you want it, so you'll have to experiment :)
If there are leftover capers after salting, you can put them in a glass jar.
