Caputo Pizzeria is what you can call Naples standard flour. With Nuvola Super flour, you get Caputo Pizzeria on steroids, where everything possible has been done to assist pizzerias that work with pizza canotto, which are pizzerias that value high, airy edges with max swoosh.
So, the flour tries to help with this, and we have to say it does a great job. Compared to the regular Caputo Pizzeria, this flour has a W-value of 320-340, making it suitable for indirect doughs as well.
NOTE: The 15 and 25 kg bags have tape on the top side because they come like this from the producer. So, they have not been broken and then patched up :)
