We had to insist a lot, but now Latteria Sorrentina has finally agreed to sell their Fior di Latte in small packages to us. This cow's mozzarella is really intended for pizzerias in Naples and is made in the same way as in the traditional town of Agerola, where they are known for their extremely tasteful Fior di Latte.
This has long been a little missing link when we compared ourselves with pizzerias in Naples, because most Swedish cheeses of the same kind are simply not very good. But now that we use it on our own pizzas we are happy :)
Compared to what you find in your local grocery store, this Fior di Latte has a distinct and refreshing taste, while being a bit drier and having the right consistency for Neapolitan pizza. That's why we're very grateful to be able to use it and offer it here on the webshop.
Please note: Fior di Latte is delivered frozen, and when it arrives you should pour out the water and put it in the fridge - where it will last for about 1-2 weeks. In the summer, however, it is not always frozen. You might be able to freeze the cheese again, but we don't recommend it. The stickiness changes depending on how long it's in the fridge and the batch it comes from, so you'll have to adjust the size of the pieces.
