Piantoni Traditional "00 MD"
Molino Piantonis Tradizionale “00 MD” has lately become one of our favorites. This is a medium-strength flour with a W-value of 290-320, hence, it is significantly weaker than its buddy “00 LG”. Therefore, it sometimes suits regular doughs better.
“MD” stands for medium-long fermentation times, and the flour generally shares many characteristics with the standard flour Caputo Pizzeria. One difference we've noticed is that it gives the dough a more even color, which we think is pretty. Compared to Caputo Pizzeria, this flour absorbs less water, so you have to subtract a few percent from our standard recipe.
