Rosola is a very small producer with only 8 employees who make this extremely tasty Parmigiano Reggiano. The parmesan is made from the milk of a cow breed called Bianca Modenese. This breed is endangered, and Rosola has had to fight hard to save it.
These cows only yield about 20 liters of milk a day, but it is sweeter and richer in protein than regular milk. This, along with a whole 30-month of maturing and the fact that Rosola only produces one wheel of cheese from this kind of milk per day, creates a parmesan that is nothing less than the best of the best.
Is the parmesan from the store around the corner cheaper? Yes, of course, but the price here is damn well justified. Plus, the actual price difference isn't as big as one might think…
