Olive Oil - La Collina Blu
This is one of the newer oils that we have chosen to introduce at the restaurant. We do change up our selection occasionally, but for the last two seasons, we've stuck with this one. A fun fact is that the oil is produced by Åsa Johansson, a Swede living in Tuscany.
We're not super nerdy about olive oil, we really just think the taste and balance are important. Åsa, however, is nothing less than a perfectionist who gets everything just right. She picks the olives from the trees at the perfect ripeness, gets them into the press quickly, presses them with the correct method, you name it – she does it. There's 100% love and honesty here.
The oil itself is quite elegant and smooth in taste initially, but with a pleasant peppery aftertaste. Explaining tastes can be a fairly dull process, so you'll just have to try it for yourself.
We only use this oil when we're dressing pizzas after they come out of the oven. That way, the oil doesn't lose its elegance and the taste doesn't disappear as much. That's only fair to Åsa :)
