This biscotti stone is made by the prestigious Fornace Saputo, who are the best in the world at making refractory stones for pizza baking in ovens over 400 degrees. Everyone who knows something about anything knows this is true :) These stones are for those with pizza ovens that reach over 400°.

Why such a good stone is so important is because the thermal conductivity of the material the pizza is lying on must be very precise. If you have an ordinary refractory stone that you find around Sweden, the pizza's bottom burns in no time.

These stones are actually one of the biggest secrets of Neapolitan pizza ovens, and you should know that keeping it a secret is a big deal. If you're going to bake good Neapolitan pizza at high temperatures, you just can't avoid using one of these.

If you want to adjust the dimensions of the stone to fit your oven perfectly, just put a diamond blade on the angle grinder and go for it. The stone can then be cut like butter.

NOTE: When you receive the stone, we recommend opening it as soon as possible to see if it is whole. Unfortunately, they tend to mess up during transportation... If it is cracked, just take a picture when it is in the box, and email it to shop@lillanapoli.se.

Snabb leverans och stor skillnad

Köpte den till min Austin pizzaugn. Och blev inte besviken, alla 6 pizzor som gick in blev helt perfekta. Tjockleken gör att den håller värmen längre och kommer upp lite närmare taket. Ingen av bottnarna kom i närheten av att bli brända. Så min rekommendation är att sätta upp er på väntelistan om den är slut och beställ så fort den kommer in. Ni lär inte bli besvikna.

Stenen passar i Netonnets ugn. Dock blir den något hög.
