LG stands for lungo (long) fermentation times. When it says lungo on the package, it basically always means that it is a stronger flour. This flour is meant to be used for indirect doughs or direct doughs on extremely hot days where the dough needs to hold together better. We actually think it works great for both direct dough and indirect type biga or the like. Easy to handle in general.
