0009 is a gluten-free flour where Petra has done everything to make the best pizza possible, and now they have really succeeded.
The most important thing is of course that it tastes good, which it does. No need to read more after this really :)
This gluten-free flour has a high water absorption and can rise for up to 48 hours. The dough balls are easy to handle, and the dough gets the right strength (with the right recipe).
The flour can withstand temperatures of up to 220 degrees, so you can take it easy with baking, but you can still get great results.
