Petra 1 is a stone-ground flour (the fine stuff, that is) that is primarily made for bread. It is also good for more bread-like pizza (like Pinsa) and pastries of various kinds.
This flour is Tipo 1, so it is coarser ground than Tipo 0 or 00. It has a lot of fiber, which together with the stone grinding creates a great taste.
Petra 1 is high in protein, which means it is strong and good for long fermentations. It can handle up to 90% hydration (although not recommended for pizza).
The flour is probably as high quality as flour can be and it really shows in the taste. There's really no need to fuss about anything else.
