Filetto di Pomodoro are simply sliced tomatoes. These are from the producer Terramagna, and they are San Marzano tomatoes, although you can't say that because they are not whole and peeled (rules and stuff, you know).
The tomatoes almost look like someone cut up pieces of meat, but no vegetarians need to worry :)
Sliced tomatoes retain more structure and become a little firmer than whole peeled tomatoes, which makes them more noticeable in the dish while also giving them a lovely texture. It's also stylish and a little special.
This makes these tomatoes perfect for when you want the tomato to be the focus. Of course, they work great on pizza, but also for simple pasta sauces and just a little pasta, olive oil and garlic. Also delicious for salads and bruschetta of various kinds.
