Speck from northern Italy is a unique air-dried and lightly smoked ham. It is gently seasoned with herbs such as juniper and rosemary and allowed to mature slowly. The ham is aromatic and slightly smoky with a firm consistency. We have it on pizzas instead of cooked ham like Vesuvius. Simply because we think it tastes better. Speck works great on the charcuterie board too.
The salami is made by Villani, one of Italy's oldest companies in the charcuterie industry. It is the producer that maintains the highest level when it comes to sliced charcuterie. We have tried many over the years, but Villani maintains a very high and, above all, stable level.
