Ricotta "Vacca Bianca"

Rosola - the world-renowned producer with only 8 employees - makes this ricotta from the milk of the endangered Bianca Modenese cow. Rosola is fighting to preserve these cows, because they make sweeter, more protein-rich milk that tastes damn good.
