Parmigiano reggiano (22 months) - Rosola

This Parmigiano Reggiano is from Rosola, which is a small producer with only 8 employees. This particular one is made from "regular" cow's milk, which means that it is cheaper than its friend which is produced from Bianca Modenese cows.

The Parmesan is aged for 22 months and has a nice softness, good saltiness and just the right amount of nuttiness. Simply an incredibly good parmesan that goes well with a lot.

Good to know is that the weight of the cheese can vary plus/minus a few grams.
