Rosola is a very small producer with only 8 employees who make this extremely good Parmigiano Reggiano. The Parmesan is made from milk from a cow called Bianca Modenese. This breed is endangered and Rosola has had to fight hard to save it.

These cows only give about 20 liters of milk a day, but it is sweeter and richer in protein than regular milk. This, together with aging for a full 30 months and the fact that Rosola only makes one wheel of cheese from this kind of milk per day, creates a parmesan that is nothing less than the best of the best.

Is parmesan from the store around the corner cheaper? Yes, of course, but here the price is damn justified. Then the price difference is actually not quite as big as you might think...
