Friarielli is a rather unique vegetable for the Naples area. One of the most popular dishes is called Salsiccia e Friarielli, which go perfectly together according to Neapolitans. This dish is also first over to the Pizza and is, next to the Margherita, perhaps one of the most popular. The taste in Friarielli is quite difficult to describe, but maybe you can say it's broccoli-like. Search google for recipes, there are tons to find.
There are two ways to put friarielli on the pizza:
1. Rinse and just put on the pizza together with Salsicca
2. Pre-cook the Friarielli with Salsicca for a couple of minutes. Then the Salsicca will also be easier to break up on the pizza when it is to be topped.
Provolone cheese is often smoked on this pizza, but if you want the smoked flavour but don't have access to smoked mozzarella, just grate some smoked cheese of any kind and put on the pizza in any amount. Experiment.
