Petra is a flour producer that's perfect for connoisseurs. The price tag is higher, but you get a stone-ground flour and the whole package that also tastes good and maintains a consistently high quality. Many of the best pizzerias in Naples use Petra's flours, and if it's good enough for them, isn't it good enough for us mere mortals? :)

The 5037 flour is Petra's "best" flour according to them, but of course, you'll have to decide for yourself. The flour is of the stronger type (W 320-340) and suits both regular doughs and indirect ones like biga.
