This biscotti stone is made by the ancient Fornace Saputo, which is the best in the world in producing refractory stones for pizza baking in ovens over 400 degrees. Anyone who knows anything about anything knows this to be true :)

The reason why it is so important to have a good stone like this is that the thermal conductivity of the material on which the pizza rests must be very precise. If you have a normal refractory stone that you find around Sweden, the bottom of the pizza will burn in no time.

These stones are actually one of the biggest secrets of Neapolitan pizza ovens, and you should know that the secrecy is big. If you want to bake good Neapolitan pizza at a high temperature, you simply cannot avoid using one like this.

This biscotti brick is more expensive than our other because it has to be packed crazy perfectly so it doesn't break in shipping. Without this packing procedure, we received far too many complaints, so you have to put up with this. Such is life sometimes :)

Blev en helt annan nivå på pizzorna med denna biscottisten. Den avger energi lite långsammare än originalstenen till Ooni 16, så pizzan gräddas lite mer homogent. Helt plötsligt kom de riktigt fluffiga kanterna och botten blev lite mjukare. Grymt nöjd!
Vet inte varför jag väntade i nästan tre år på att byta sten.

Passade perfekt i min Ooni.
Höll värmen mycket bra. Helt klart annorlunda jmf med originalstenen. Rekommenderas varmt.
