Baking steel/pizza steel
This pizza steel is perfect for ovens that don't exceed 400 degrees, both for home ovens and pizza ovens. It's made from ordinary farm steel, just like any other baking steel, pizza steel or whatever you want to call it. Also works great for bread. In this video you can see how we use it.
In a home or pizza oven that isn’t very hot, steel is undoubtedly better than stone for bread and pizza. The reason for this is that steel conducts heat faster into the base, which is especially important at the start. This results in better rise and swoosh, so it's kind of a no-brainer. Better heat conduction also means it heats up faster than stone - so less waiting and more baking, as it should be.
Good to know is that the baking steel is made of steel, after all, and therefore weighs 8 kg. The whole point is that it weighs a bit so that it can store heat in it :)
