Calabrian artichokes are artichoke hearts (i.e. the good part of the artichoke) which are prepared in a traditional Calabrian way.
First they are boiled, then they are marinated in sunflower oil and virgin olive oil, where they are also seasoned with parsley, vinegar and a little salt. The result is as delicious as can be, with a delicious balance between sweetness, acidity and heat.
These artichoke hearts are from Tuttocalabria, which is a regular producer here with us.
Artichoke hearts are really awesome as an antipasto. Also on a bruschetta, in a salad or in a pasta. In other words, the possibilities are endless.
