Petra's flours are of the finer variety with a stone-milled production. Their flours can be found among the fine pizza bakers in Naples, so you can count on the quality! If you want more fancy flour, you might have to search for a while.
The 0102 High Performance flour is an exciting flour that is created to produce very high edges and maximum swoosh. A strength of W 320-340 also means that it is well suited to indirect doughs, like biga.
This flour is often found in pizzerias that chase the characteristic high edges and lots of swoosh, but we have not tested it enough yet to say exactly how much better it becomes. You'll have to test it out :)
