We have basically tried all spatulas you can find and this one is, in our opinion, the best. Good stiffness but still good flex at the bottom to sort of get under the pizza ball in the dough tray. A putty knife is needed to lift dough that is in slopes and to clean your baking surface in a quick and smooth way.
It is also optimal for chopping garlic à la minute, which is always done in Naples. You take a slice and chop it thinly with the spatula directly on the pizza counter. This means that the garlic is mashed a little at the same time and the flavor spreads on the pizza, even if the baking time is short.
