We have tried quite a few gluten free flours at this point and as far as we can tell, this has performed the best. Of course, it's not the same as regular flour, but an awful lot better than ready-made bases, etc. You're almost a little surprised. Going forward, we will make a short film on how the actual baking is done. When there is time. But really, it's not that difficult. Work to flatten the pizza and leave an edge all around and it will be fine. Then it's just a matter of trying your way. If you are careful, it is also possible to slap the pizza on the bench in the same way as you make a regular Pizza Napoletana. If the dough cracks, you can just press the hole together again.
